The Perfect Summertime Recipe: Mango, avocado, & corn salsa with lime

With quarantine being lifted across the US, a lot of people have started to adventure out, excited to finally see friends and family again. It's so great to see people coming together to celebrate graduations, birthdays, and holidays after being cooped up for so long inside. Walking around Austin, I can literally feel the energy changing, as a lot of students (me included) finally begin to enjoy their summer vacations!


While we've still got a little ways to go before things completely go back to normal, I thought it would be a good time to post this fun, simple recipe that's perfect to serve at barbecues, grad celebrations, and memorial day parties!



Mango, Avo, & Corn Salsa


Light, fresh, fun, and prepared with minimal ingredients, this salsa is a summertime staple! Made with sweet mangos, creamy avocado, fire-roasted corn and finished off with a spicy chili kick, this recipe will easily take your appetizer game to the next level and surprise all your guests at your next fiesta!

Cook Time: 0 min

Servings: 3-4 cups, 4-5 people *depending on intended use*

Ingredients:

  • 1/4th red onion, chopped very fine

  • 1/2 green Anaheim chili, chopped

  • 1 medium sized tomato, diced

  • 1 mango, cubed

  • 1/2 cup roasted corn

  • Juice of 1 lime

  • 1/2 an avocado, cubed

  • Chili powder

  • Salt


Directions:


  1. Prepare the ingredients: chop the red onion, chili, tomato, mango, and avocado

  2. Add all of the chopped ingredients along with the corn* and the lime juice to a bowl.

  3. Sprinkle chili powder and salt to your liking.

  4. Mix until well incorporated, but be careful not to over mix and crush the avocado.

  5. Cover and chill until ready to serve.

Notes:


  • * I used frozen pre-roasted corn from Trader Joe's, but feel free to substitute with regular corn or another variety of your choice*

  • This will keep for three to four days in the fridge. The lime juice helps preserve the avocado so that it won't turn brown.


This recipe can be customized to your liking! Add your favorite seasonings, change up the ratios, or make it spicy! It's up to you! This recipe is so easy and fun to make, and really great for big family parties during the summertime. This recipe tastes amazing on fajitas, burgers, tacos, burritos, salads, or as an appetizer on its own!
